Bright Cheese & Butter Manufacturing Limited has been part of the rural fabric of Oxford County for more than 150 years. Founded in 1874 by a group of local farmers, the company was created to supply surrounding communities with high-quality cheese and butter. Over the decades, the company adapted to changing markets while maintaining the traditional methods that made its products well known. While the dairy industry has changed dramatically, Bright Cheese & Butter continues to operate with a commitment to quality and consistency—producing cheese the natural, old-fashioned way using 100% milk.
Our Cheesemaking Process
Milk Sourcing
We use 100% fresh, local milk from Oxford County farms. By maintaining close ties with our local dairy community (many of whom have been with us for generations), we ensure every batch starts with the highest quality ingredients.
Curding
Using traditional methods, we transform local milk into our signature “squeaky” curds. Our cheesemakers carefully monitor every vat to ensure the texture meets the standards we first established in 1874.
Pressing
To achieve the perfect firm texture, the curd is placed into presses. This essential step uses consistent pressure to shape the cheese, staying true to the natural, old-fashioned methods of our founders.
Aging
Nature is our master cheesemaker. We allow our cheeses the time they need to develop distinct, natural flavours, ranging from mild and creamy to the bold, sharp profile of our heritage cheddars.
